Small lot wines
FROM BUD-BREAK TO CONSUMER:It all begins in January of each year with controlled pruning to avoid overcropping of the vines.
In April, bud-break (new growth), ensues and organic cultivation continues until the grapes start turning color in early August.
At harvest (in early October), the clusters are handpicked and meticulously groomed to insure that only sound grape berries make their way to the winery.
At the winery, the grapes are foot trodden and hand destemmed for a pure berry autochthonous (indigenous yeasts), fermentation.
When fermentation is complete the wines settle and remain “Sur lie” (over the lees), for ten months before going to barrel.
After 12 months in barrel, the wines return to stainless steel tanks for an additional twelve months of natural gravity fining before bottling.
Bottled wines remain cellared for a minimum of twenty-four months to complete five-years of evolutional journey before made available for enjoyment.
